4 medium potatoes
1 small glass of white wine
1 teaspoon of sugar
Step by step to prepare the potato omelette:
To prepare your potato omelette, the first thing you need to do is peel and cut the potatoes. It doesn’t matter whether you want to cut them lengthwise, diced or sliced. Just bear in mind that, depending on the shape you choose, they will take more or less time to cook.
When you have peeled and washed the potatoes, you should fry them. We advise you to use a deep fryer, but if you don’t have one, you can use a frying pan. Put the oil in the frying pan and let it heat up. Add the potatoes and let them fry until golden brown. When they are golden brown, separate them and place them on a plate on absorbent paper. This will remove the excess oil that accumulates during frying.
Now, it is time to cut the onion and brown it in a frying pan. You can use the same oil you used to fry the potatoes. When it starts to brown, add the small glass of white wine and a teaspoon of sugar. In this case, it is important to keep stirring to prevent the sugar from sticking to the pan. You will see that it is a very quick process and you will only need a few minutes for the onion to caramelise with the sugar.
Set aside and leave to rest for a few minutes.
Next, beat the eggs and heat a frying pan with a little oil. Add the onion and potatoes to the eggs and stir well. Place the mixture in the frying pan over a very low heat and leave to cook for 5 to 10 minutes.
When you see that the egg is starting to set, it is time to turn it over and let it cook for another 5 to 10 minutes.
